Danche is the name of the washing station located in the Chelbesa village, Gedeb. It is owned by the exporter Snap Coffee and this lot is organic certified. The station buys cherries from approximately 400 farmers in the local area. The farms sit at very high altitudes (2000 - 2300 masl) and have an average size between 1-2 hectares. The high altitudes play a significant role in shaping the distinct flavours found in the coffees here. Harvesting typically takes place later in the season compared to other regions, owing to its location. This prolonged cherry maturation period contributes to the exceptional quality and high density of the beans produced. 

All coffee around Chelbesa village is collected manually and hand sorted to remove any under and overripe cherries. The coffee is then fermented under water in tanks for an average of 72 hours, but any time between 48 - 100 hours is common practice here. The coffee is then density graded using water filled channels. Cherries of lower quality (with a lower density) will float and are removed. This leaves the denser, higher quality beans to be separated as higher-grade lots. The parchment is then soaked in clean water and dried on raised beds for approximately 8 - 20 days. The coffee is dried in layers of 2-8 cm, depending on the climate, the type of tables, and the stage of drying.

This coffee has been roasted for filter brewing. With flavours of Apricot and Earl Grey, expect a fruity and floral cup with a long silky mouthfeel.
