While you were sleeping, this coffee was, too — but its "bed" was a whisky barrel from Sons of Vancouver, and its slumber lasted just over two months.

Emerging with an oaky air, it took a deft little spin in the roaster and arrived at the party right when the music got good.

This year's Whisky Business is an anaerobic natural from Brazil, a step up from last year that swung boozy well before the barrels came into play. We've roasted it for a bit of extra caramel character, rolling low and slow for a profile that's great on drip or espresso.

Designed for sharing on festive occasions but no less a delight to savour solo, Whisky Business is our figurative glass raised to you, the friends and fans we hold dear.

Note – though these coffee beans spent numerous weeks absorbing the residual whisky character from otherwise empty oak barrels, the finished product is zero-proof.

This year’s barrels came from our friends and fellow North Vancouver denizens over at Sons of Vancouver, who used bourbon barrels to age rye whisky, followed by their famous Amaretto.
Thrice spirited, the barrels came to us in time to fill with a fruity washed Colombian coffee from a smallholder empowerment initiative, Monkaaba. 
6 weeks of aging later, we roasted the barrel-conditioned coffee just long enough to draw out the sweetness and cask-strength sophistication.
The result is a complex, heady character beautifully suited to espresso, with a warmth of flavour that rings festive.
