Parainema from Grevil Sabillon's farm in Santa Bárbara, Honduras. Classic washed process. His partner, Hildaly, depulped & dry-fermented this lot in a concrete tank behind their home for 24hrs. before being washed & dried on raised beds. Resulting in a clear expression of Parainema, which has inherently zippy acidity & cola-like flavour. Cools sweet & grounding.
