El Limoncillo Ethiosar Natural Cold Anaerobic is a meticulously crafted coffee from Fincas Mierisch, grown on the historic El Limoncillo farm in Matagalpa, Nicaragua. This coffee—praised for its rust resistance and complex genetics—undergoes a cold anaerobic fermentation in temperature-controlled barrels for 48 hours, followed by a 32-day slow drying process that enhances clarity and acidity. The unique process produces a vibrant, clean cup with elevated acidity and layered flavors. Cultivated at 850–1110 masl on the Aguacate plot, the beans reflect both innovation and sustainability, with the farm emphasizing renewable energy, on-site education, and social welfare. This lot embodies over a decade of varietal experimentation and a century of family farming heritage, resulting in a coffee as rich in story as it is in flavor.
