As we enter the sweetest time of year for coffees from Ethiopia we are stoked to offer this stunner from the Chelchele region of Yirgacheffe. A large percentage of people from this area rely on coffee as their main source of income. Decades of experience, careful harvesting and processing leads to some of the most special coffee this world has to offer.
This specific lot was naturally processed and anaerobically fermented. After harvest, the cherries are sealed in pressurized, oxygen-free tanks and cold fermented between seven to ten days. Subsequently, the cherry is placed on raised beds to dry. The results of this process are intense and stunning! Fresh off the grind we are smelling deep fruit notes like blackberry and red wine. Flavors range from fruit leather to guava to dark chocolate – all mingling nicely with a juicy acidity and medium-full body. If you like the more intense, adventurous, and fruit forward side of coffees, this one is sure to please. Enjoy!
