Mr. Mengeche Derso is a producer with decades of experience. At his estate, he works alongside four of his children to capture the unique character of Yirgacheffe. This naturally processed lot brings syrupy sweetness and elegant florals in a profile that is pure Ethiopia.

The Cup
Expect fragrant blueberry and dried apricot. The high sweetness, almost syrupy, is like chocolate ganache and lemon cola. As it cools, jasmine and hibiscus are deliciously refined. Gentle, citric acidity offers a fine counterpoint on the finish.

Mr. Mengeche Derso owns and operates a 15 hectares estate in the highlands of Gedeo, renowned for its production of high-quality Yirgachefe coffee. At 62 years he draws on decades of farming experience, while seeking to constantly evolve and develop. Across the estate, natural fertilisers such as animal manure and plant remnants are used to enrich the soil, which help to maintain the terroir. His dedication to producing top-quality coffee has earned him recognition from government organisations.

The Process
Natural coffees are typically delivered the day they are harvested, and are first sorted for ripeness and quality before being rinsed clean of dirt. Then they are spread on raised drying beds or tables, where they will be rotated constantly throughout the course of drying. Drying can take an average of 8–25 days, depending on the weather.
