Rocket Flower is a boldly experimental Caturra brought to life through a carefully dialed yeast fermentation that pushes flavour into playful, floral territory.

Huver Castillo is a third-generation coffee producer from Buesaco, Nariño. His path into coffee wasn’t exactly traditional. Until a few years ago, Huver was a math teacher before returning to the family land to work alongside his father at El Paseo, a farm that’s been in the Castillo family for over 20 years. What started as a return home quickly turned into a deep curiosity for what coffee could become.

El Paseo sits high on the slopes overlooking the Buesaco valley, shaded by native trees and spanning elevations from 1,750 to 1,950 metres. This environment creates ideal conditions for slow cherry development and gives Huver plenty of room to experiment. Alongside his family, he has been steadily exploring more progressive processing techniques while staying grounded in the rhythms of a small, hands-on farm.

Rocket Flower is where that curiosity really takes off. Using a multi-stage yeast-driven fermentation with carefully controlled anaerobic conditions, Huver fine-tunes each step to build complexity and expressive aromatics. It’s a process rooted in precision, patience, and a willingness to try something new.
