We're delighted to share this new washed caturra from El Higuerón, a farm we first featured last year. This special lot showcases the caturra variety beautifully, with clean flavors of apricot, red apple, and a subtle bit of tropical fruit.
For over three generations, Fabiola Ortega and her husband, Julio Muñoz have maintained El Higuerón's rich tradition while adapting to modern practices. Through training and participation in innovative initiatives like the cupping school (with help from long-time partner InConexus), the Ortega family have deepened their understanding of their coffee and its unique characteristics.
This particular lot of coffee was produced by Fabiola's oldest son Cesar Dario. They entrusted a portion of their land to him, and his work is evident in this coffee. These cherries were harvested at their optimal ripeness, and after depulping they were submerged in a minimum of water for 24 hours. Subsequently they were washed in two cycles and then dried for 18 - 25 days under airflow canopies.
