We are absolutely loving Jorge Rojas' work, and this beautiful white-honey geisha is a stunner. We were mesmerized by the beautiful floral notes, ripe apricot, and perky, zesty lime. As it cooled we found a delicious orange creamsicle flavor as well.
Jorge grew this coffee at La Roca, a 7-hectare organic certified farm. After harvesting ripe cherries, he fermented the coffee anaerobically in whole cherry for 24 hours. Then he pulped the coffee and fermented for another 24 hours. After a gentle, incomplete wash (hence white-honey), the coffee was dried in two steps, with two pause/stabilization periods. According to Jorge, this method intensifies the coffee flavors without altering their composition.
