Fresh Honduran coffees are finally trickling in! This super-special lot was offered to us by our cheery friend Andros from Cima Cafe. Our tiny supply of this coffee was set aside from the larger lot that was submitted to the Cup Of Excellence competition, where it won First Place in the Washed Coffee category just two months ago. Huge congratulations to the farmer, Fabio Caballero. This coffee is delicate and beautiful, with flavors of orange, mango, vanilla, and a bit of raspberry in the finish. 

La Salvaje is a biodiverse, 90% shade-grown farm in San Isidro, Santa Ana, La Paz, where environmental conservation is a top priority due to its natural springs that provide water to nearby communities. Founded in 2019 by Fabio Caballero Jr. and his grandfather, the legendary Fabio Caballero, La Salvaje was planted with seeds from their Cup of Excellence-winning Finca San Francisco.

The farm now produces exceptional Java and Gesha varieties and serves as a haven for native wildlife, birds, and dense shade trees. Fabio Jr., a fifth-generation coffee producer, has fully immersed himself in specialty coffee and has gone on to produce multiple Cup of Excellence-winning lots. Together, the Caballeros continue a legacy of quality, innovation, and stewardship.

Harvested by hand between February and May 2025, this gesha was picked by community members in San Isidro. After a 48-hour dry fermentation in covered barrels, the coffee was washed and slowly dried on shaded raised beds for 25–30 days before making its way to us.
