This coffee was fermented first for 48 hours to soften the cherry, after which it was pulped, fermented again for 24 hours, and then washed. The coffee was then dried for 14-21 days, with regular turning.
Juan's farm sits between 1900 and 2100 meters, producing geisha, caturra, bourbon, marshell, and catuaí varieties. This red geisha was harvested in September and landed at the roastery in December.
