By constantly measuring the Brix sugar content level, Alejo and his team identify the ideal harvest moment.\u003c\/em\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cem\u003eFollowing harvest, the cherries are pulped to remove the skin. A thick layer of mucilage is left surrounding the beans imparting sweetness and body to the coffee as it dries. The coffee was dried for 4 days in the sun, before 33 hours mechanical drying.
