Nestled on a small plot of land amidst a forest of coffee and pine trees, Moises Herrera's Variety Garden is an incredible collection of over 60 coffee varieties. The seeds of some of the rarest coffees in the world are cultivated here. This small oasis is the heart of Moises and Marysabel Caballero's experimental farm project. The cultivated seeds come from various sources: from their producer friends, seed banks, or even from green coffee buyers who brought them to Moises to satisfy his curiosity.
The Geisha variety originates from the primary forests of Ethiopia and was long lost. It was rediscovered in the 1960s on the grounds of Hacienda La Esmeralda in Panama. Compared to other varieties, the Geisha plant appears stunted and produces few fruits. But the delicately floral sweetness of a cup of Geisha tea is unlike any other!
This variety produces an exceptionally flavorful coffee, but only under very specific conditions. The plant requires a particular altitude and climate to reach its aromatic peak. Grown at lower altitudes, the yield will be higher, but the aromatic profile will be less complex. The challenges of production, its complex aromatic profile, and its recent discovery make it a rare and highly sought-after product!
At the Caballero farm, the growing conditions for Geisha coffee are excellent. Marysabel and Moises are meticulous and rigorous in the care they take in producing their coffee. This batch is no exception; in the cup, we find this excellent work: delicate floral and tropical fruit notes.
Moises received these incredible seeds from a farmer friend years ago. He immediately planted them on his farm, located in southwestern Honduras. While this variety was still relatively unknown to the world at the time, Moises had some understanding of its exceptional potential.
