The farm Shipago has approximately 20 hectares of land dedicated to growing geisha, bourbon, catuaí, catimor, and pacamara. Surrounding the farm is more than 200 hectares of natural forest. This coffee was first fermented in cherry for 24 hours. Then it was floated to remove defects, pulped, and fermented another 96 hours. Despite many hours of "fermentation", this coffee is incredibly clean without any trace of process flavor. Process: Washed
